Jelito is a traditional Czech blood sausage. It’s prepared using pig’s blood and ground pork meat, primarily from the head, belly, and offal. The sausage incorporates lard and various spices such as marjoram and cumin. Unlike smoked sausages, jelito is typically boiled or fried before serving. It pairs well with pungent mustard, horseradish, and cabbage.
